Side note: I changed laptops a couple of years ago and I had no idea how to get all the stuff that I safely and prudently stored from the portable back up thingy onto the new laptop so I just gave up. How do those damn things work??
That depends on a number of factors. Critical documentation I would not back up into the cloud unless encrypted in a way I would trust (which is painful). Photos and media maybe not so much (depends on the content). For your desktop, maybe consider using a NAS and time machine (which you might also want to mirror to a separate location, but that's another story).
As for your ipad/phone, there are apps out there that can help you back stuff up to a local device. I haven't explored them, but there should be something out there that will meet your needs.
To your existing backup, it depends on how you backed it up in the first place. Backup apps ranged from a simple copy from here to there all the way to encrypted and stored in a proprietary format. You'd need to provide more details before anyone can help you on that.
