How do people read each cabin? The only cabins I can say with certainty aren’t oversold (for obvious reasons!) are Y and F!

(I will confirm this in a few hours at F-wing check-in if the agent’s being nice!)
Others may correct if I've gotten any of the information wrong here, but the look of things there are still seats being sold in every class here:
First (F, A) - seats still available in both F and A buckets
Club World (J, C, D, R, I) - showing 6 seats left in Club (in the full fare "J" bucket)
World Traveler Plus (W, E, T) - showing 3 seats left (in the full fare "W" bucket)
World Traveler (Y, B, H, K, L, M, N, S, V, Q, O, G) - showing multiple seats available in various economy ticket buckets, including "G", which I believe is the cheapest fare bucket.

I'm not sure how this relates to the number of actual seats in F or Y (for example, if the 2 seats in "A" class, once sold, use up any of the remaining "F" seats), but certainly there are still seats in every cabin going by the figures you've given (just the only remaining seats in Club and WTP are at the pricy end of the spectrum).

A good guide if you want to see what fare class applies to each cabin, is to look at the BA Tier Point Calculator page - it will tell you what fare classes sit in each cabin.
