Learned today that the next round of limited changes to onboard Polaris have been announced internally, and the direction is, finally, exciting - big moves being made back to the original Polaris concept.

Beginning April 1, the three-step main meal Polaris service that was tested on routes to/from
FRA last month will be expanded on all flights to/from India (DEL/BOM) and Tel Aviv out of IAD/EWR/ORD and SFO.

Three-step Polaris service will include:
Step 1 Pre-meal beverage and warm nuts
Step 2 Main meal tray with *plated* entree
Step 3 Dessert plate (cart will not return)

This will apparently include the return of table linens, plating in the galley from foil containers and into bowls to improve presentation, including fresh garnishes … and … printed menus.

What seems to be most exciting is completely redesigned menus, changing monthly:

New versions of salad not limited to leafy greens to reflect regional tastes. Examples include papaya salad with feta mousse, pickled watermelon, and mesclun greens. Some will include appetizer items such as fresh shrimp.

Entrees will return to four choices, and move away from the traditional offering of beef, chicken, fish and pasta and include a Vegan choice. New choices include Colorado brown sugar flat iron steak with hasselback potatoes; Chicken thigh with roasted shallots and pommes pont neuf with maldon sea salt; and, Vegan Pasticchio.

Desserts will be modified to include a regional choice when appropriate. Examples include pre-dressed ice cream, warm mini tarts OR Indian sweets, and a cheese plate.

Mid-flight options will return with multiple choices of hot and cold options, such as a marinated chicken and cheese panini and soups.

Arrival service will also be spruced up with new choices, including Gruyère-cocotte egg with mushrooms and Brioche French toast with blueberry compote.

Crews and passengers will be surveyed to further refine the service and food. Based on this, a final service will be adapted and rolled out on all Polaris routes.
