Now that I have bought the ticket all of the empty seats have the dreaded "x" and I don't even get the option to request an upgrade.

Similarly, almost all of Premium Select was available, but now all "x" with no opportunity to buy my way up.

Does this ever change as we get closer to departure? Do I need to check this every day? What a pain.
It's not that unusual to have no FCM offers available for PS seats (which is why they are all X'ed out). You can still upfare to PS by going through Modify Flights option. It's possible for upfare price (paying fare difference) to actually be less than FCM offers at times. FCM offers are not actually upfares and you lose the value of purchase price should you make a voluntary change to ticket. It is odd that you did not get upgrade to C+ after purchase as a Plat. Do you have any other passengers on your reservation? I'm assuming you didn't buy a BE fare.
