I would say they’re pretty different in style, though obviously both are primarily created for mainland US audiences so do have some overlap. Conrad’s Polynesian night covers a few different French Polynesian dancing styles, with a little bit of “education” thrown in. It’s less of what we’d call a pantomime in the UK. Food is a bit more international and less focused on local favourites than in your typical Hawaiian luau.
Thinking back to the most known luaus I’ve been to, they’re also often on an entirely different scale even in luxury resorts with hundreds of people. With fewer people it’s somewhat more intimate and you don’t have the issue of having to make do with paper plates and pre-mixed cocktails in plastic cups for your $200 dinner.
