At least one person for any potential issues abroad. Similar approach to when I go hiking by myself: let at least one person know you'll be gone and at what time / when they should expect you back. As safe as air travel is, you never know.
As
flyingpbandi pointed out, I try to mention it to at least one friend/family member should something come up. I would not want something unfortunate to happen and there be absolutely no leads to my whereabouts.
Of course, my approach is different depending on whether I'm flying to Miami or Dar Es Salaam, Tanzania for a trip.
