I don't think that "I voluntarily cancelled because I was afraid of catching COVID" is a valid excuse.
AFAIK, Iberia's policy requires you to have tested positive personally / travel companion / household member = quarantine, or for travel restrictions to have changed. None of which appears to apply to the OP's situation.
So suing Iberia wouldn't get you anywhere, unless IB can't be bothered to contest it...
