We have met that requirement. However, when trying to enter vaccine info on the United Travel Ready Center, J&J/Janssen isn't even an option. Is this something that can be cleared up at check-in at the airport, or is it better to go ahead and get a test asap? FWIW, I booked and paid for a test through the UA site with a "testing partner," CVS, only to have CVS cancel said test several hours later. So now the only option is to go to ORD tomorrow.
United's TRC is a great guide but it's generally a guide only. However, if you want to use the app to check-in then you will have to follow the TRC guidelines which may not be 100% accurate for the countries you are visiting. Germany still only requires vaccination without the need for any booster so you are covered here. Spain requires vaccination within 270 days or a booster (no expiration). You're also covered there because you are boosted by the fact that you have the J&J vaccine and a separate booster. If the TRC won't let you past the data entry process then ignore it and go to the airport and handle check-in. You do not need any test for your outbound itinerary.

LH is responsible for the requirements of your return trip, regardless of stopover or destination, since you will be checking in with LH. They will validate you are able to travel to the US and won't let you on the plane in ATH if you aren't. United's app plays no role here since you won't be using it for check-in. So United's TRC also doesn't play a role.
Separately, the US still has the rules of having every single passenger asked if their bags have been with them the whole time, etc. etc. and at that point your Covid documentation will be checked AGAIN in FRA or MUC. It will also be entered into United's system at that time in case LH didn't transfer it.
