Would this allow you to lock in the current award category or does the minute you change an existing reservation by reducing nights or changing travel dates does it automatically get re-priced at the current award category?
Strictly speaking, it would reprice. However, with Hyatt's excellent customer service, there's a good chance they'll reverse the reprice if you ask (by giving you the points difference).
Personally when the dates are still in flux, I book each night separately so it's easy to cancel. It does mean you need 2-3x the points.
