If there are remaining partner flights, that may be an issue. If all UA, probably can do. Depending on the circumstances and timing, the flights may get repriced.
Note if flights get cancelled you may have more flexibility.

This is against UA policy, so UA will not knowningly bless this but again if dates are different enough UA may not detect
