In March of 2020 I was actually at the Canopy the week everything started shutting down and was moved to the Doubletree for the last night of my stay because the Canopy was closing. (The HGI isn’t too far from the DT.)
As a tourist, I’d say Canopy all the way as it is within walking distance, or a short taxi/Uber ride from everywhere you’ll want to go. The DT and HGI are on the business district, and there really isn’t much there for tourists, and you’ll be constantly taking Ubers or taxis back and forth.
