Used 241 vouchers do show in your BAEC account, under 'More voucher information'. Not sure how long for - maybe until they have been flown? But they do show as used when they have been used for booking that is yet to be flown, and also when they are embedded in a FTV. You should be able to link the 241 voucher number with an e-ticket for the original booking, now held in an FTV.

You have to call up to re-book with your FTV. Standard availability rules apply, so just research were you might want to go as normal and when you find availability, phone up and book the new itinerary with your FTV - it will be identified by the original booking ref. You will be required to pay any extra avios or cash for the new booking or should get a refund of the balance if it is somewhere cheaper than the original.
Even if it is ostensibly the same price as the original they will probably get you to cough up for any subsequent increase in taxes - which there have been. We recently re-booked a big FTV'd trip, all at the same avios band etc and had to pay another £26 or so in increased UK 'taxes'.
