When I look at the hotel site and the room categories on IHG, I see a description stating "open air bath" for all rooms other than what seems to be entry level / standard (the reward stay books into that). For the suite you had it says "Jetted Open Air bath in Private Garden" which I don't quite see on the pictures and the video - not in the garden I would say for sure. Also it looks like the bathtub will have regular water and not onsen water?

Yes, as you pointed, IHG website description is not correct. Bathroom is not open air bath (but can be walk-out to the private garden) and not Jetted. I have already pointed out about those matter to GM. May soon take proper action.
Regarding to bathroom water, yes, regular water, not onsen. Public bathhouse provided synthetic (carbonate) onsen.
