When a lounge is closed and I'm told that the breakfast is in the restaurant, I've found full-service US Hyatt hotels to be pretty flexible about whether it's just buffet or items of the menu that is included for me.
About tipping in the lounges: I don't typically tip much of anything for Hyatt lounge breakfasts at hotels in non-LDCs; the primary exception is if a Hyatt lounge breakfast involved sit-down service.
This is what I like about Asia. I never have to worry about tipping. It's such an anachronistic concept.
