beef stew pho with flat noodles and added Chinese broccoli

I love this type of asian beef stew and I haven’t had it in ages. Such a joy to rediscover it. It has the great gristle and tendons that i usually only see in Chinese noodle places. Of course, ppq is a chinese-origin Vietnamese restaurant - real Vietnamese pho restaurants don’t offer added Chinese broccoli / bok choy / tofu in their pho. And most of the staff don’t look vietnamese. I’ve read Yelp review complaints that they speak little English and zero Vietnamese language.
