Just to close the loop re: flights to Mexico - my wife and I flew SFO->ZIH this past Saturday - morning ~7:30 am flight.
Despite no ability to pick meals 2 weeks out ("First Class menu for this flight isn't available") and the flight details online and in the app saying there was no meal, they did offer the choice of the quiche with bagel seasoning (see post 139) and the shaksuka with black lentils (see post 127). No yogurt though. Snacks passed around an hour before landing.
So it seems like flights to Mexico are similar to transcons stateside.
