Just an update - after calling United and SWISS again without any luck I just went to ZRH this afternoon, now <24h before departure. Was able to reserve the bassinet but they wouldn’t print my tickets as could only do that if everyone was present (?) and was alone.

Anyway, pretty terrible process whereby changes can only be made physically at the airport…fingers crossed no complications tomorrow ahead of the flight!
