It seems that you’re not a tea or coffee drinker. Most Western European and North American guests would expect a coffee maker (or at the very minimum a kettle) just like they’d expect shampoo, soap, a hair dryer, an iron and ironing board, etc. They’re just basic amenities in a hotel.
By every Andaz, I’m guessing you are excluding 5th Avenue, (the now ex) Wall Street and West Hollywood as none of them had a Nespresso or Kettle in room. They did however offer tea and coffee in the lobby for most of the day.
I do drink tea and coffee. I usually have some with breakfast regardless of whether there is in room coffee or tea.
Again, I now understand how important an in room coffee machine is for some people. And I agree it would be great if every hotel offered it. But if the hotel does not and it is that important for you, then perhaps book somewhere else?
