1) They will put you up in a hotel if you misconnect. Transit visa will be sponsored by Ethiopian Airlines if you are flying with them.
2) SA is more focused on COVID nowadays rather than yellow fever. Just say you were in transit if anyone asks (they are unlikely to stamp your passport on a transit visa anyway so there won't be evidence).
