Salad will wait until tomorrow as the cucumber is still firm. I didn't look at the tomatoes but I could live without them if necessary.
Roasting butternut squash now. Cut into cubes and added salt, pepper, and Italian seasoning; is now in the oven at 400°F for around 20 minutes.
UPDATE: had to make hotter for another several minutes, then broiled for five. Came out tender and delicious. Had some of it with a fork right off the baking sheet.
