The absurd part isn't that they loaded 50% veggie meals, but that somebody out there continues to think that vegetarian = protein-free. There are plenty of tasty, and protein-rich vegetarian foods that they could serve that would appeal to all but the most dedicated carnivores. Vegetarians can get protein from legumes (beans, peanuts, etc.), cheese, nuts, tofu, etc. Yes, I realize that for some strange reason a lot of people are uncomfortable with tofu, so that probably wouldn't be a good choice. But there's nothing wrong with legumes, cheese, or nuts.

They've now done away with special meals in domestic, but the last 4 special vegetarian meals I ordered in domestic FC on NW had zero protein. Main course was typically rice and broccoli, or rice and cauliflower, with a broccoli or cauliflower side. Yum. Once I got couscous with greenbeans--for breakfast. When I get the proteinless meals, I always ask for extra almonds (or now "mixed nuts").
