Flying in "J" next week on the non-stop to Singapore. Got an email to book meal selections today. The website shows two meals (called "Supper" and "Ala Carte") each with both fixed menu and "Book-the-Cook" choices. None of these offer anything remotely like breakfast items. I assumed that the second meal would be served about half way through the 18 hour flight after people had slept. If so, it seemed like breakfast would be served for the second meal. Anyone have first hand experience with this?

Unfortunately Singapore Airlines really has this strange concept of meal services on these long haul overnight flights. Both SQ 23 (JFK-SIN) and 37 (LAX-SIN) flights feature this light supper service after takeoff, a mid-flight dinner (full meal service - not to mention that they serve this mid-flight meal towards the later half of the flight) and then an a la carte menu for the rest of the flight. Only SQ 33 SFO-SIN overnight flight has the normal dinner, snack a la carte, and breakfast prior to arrival service. For the westbound flight to SIN, they don't even have any breakfast items on the a la carte menu, as SQ cuts back on the items offered on the snack menu post Covid (now basically noodle soups and one or two types of sandwiches with ranges of junk food offered). They only have breakfast item as one of the snack items on eastbound flight to US now. However, I am sure the F/As will be more than happy to save the main meal with your choice of main course and dessert for you if you want to eat later in the flight, but I highly recommend you in reserving your choice of main course for the mid-flight/second meal when they take your drink order or before you go to sleep.
