LOL...Especially when it comes to all thing culinary, I'm always open to new ideas! This way of having pork is game changer for me where it eliminates what was my prior issue, namely that I find well done meats too dry. Nothing wrong with well done for those who prefer it, but it's just not for me.
It would have been better if I had used full fat ricotta but I used low fat. Lots of lemon and lemon zest. I used frozen chopped spinach. Spinach is so healthy...I should eat it more often. I love it sauteed with garlic (and maybe bacon!).
I am so glad to spread the word to rid the world of dried out & overcooked pork. Go for it...pork tenderloin & pork chops await!! The exception would be tougher cuts such as pork butt which needs low and slow and long time cooking.
