People are buying the selected GCs (for example this week it is Apple cards) for the boost in rewards points that one gets. But what do you do with the cards? I can understand that if they are VGCs, then the usual MSing parameters apply, but what about Apple or Happy cards. Are they used organically??

No secret, at least in my opinion. I usually post these no matter what card is offered that week so people know what's going on. But as you might suspect, most only care when it's a V or MC offer. There were no offers for V/MCs in December like there had been in years past and there is usually a dry spell until March - so some are worried the overal offer of points for V and MC GCs may be dead. Color me skeptical but we won't really know until March.
I guess the one caveat I would add is that many people could use an Apple GC (for example) as pretty close to cash. If you're buying an Apple product anyway this is a good way to get a lot of free gas for that purchase. Probably has more utility than a Subway or Dominos GC in that regard.
