The answer seems to be a resounding YMMV. I think it's pretty risky, but Vegas is all about gambling, so if you want to roll the dice and potentially get nothing for your money, give it a go.
You can check in for MGM properties on the app, get a key, pay your bill, and check out all without any human interaction. So no you don't actually have to physically be there.
According to Hyatt TOS this
does not earn Hyatt EQN credit. However, it's MGM sending the info to Hyatt and I'm not sure they particularly care enough to differentiate. For now.
