I requested a refund on 17th December for two business class tickets Manchester to Cape Town and so far nothing has been received. The email from BA said it would take around 5 to 7 working days to process the refund.

I canceled an Avios booking last Friday morning over the phone. Avios deposited into my account whilst I was still on the call and the cash element was recieved two days later. So I figure your wait of almost four weeks seems a bit too long.
