As noted above, people do not appear on upgrade list until they check-in. So you can likely expect the list to grow as people check-in for flight (and you will be moved down the list by people who have higher upgrade priority than you).
My wife and I are on separate reservations so each of us has 1 non-medallion on our reservations. We just planned the seating to seat my wife and I together and her parents together. I'm not worried about getting split apart in the 1st class seats because of the 8 seats, 6 of them are pairs.
