Do you have 1 kid or 2 kids? I think 2 kids, you'll need a 2 bedroom, only 1 extra kid allowed for the other rooms like the overwater villa.
They will upgrade Platinums, usually to sunset views if they have, or just request what you want, they'll usually accommodate if they have it. I asked to switch to Lagoon Villa to try out when I was there but decided against it because that side didn't look as nice.
As for seaplanes, they don't make the schedules, so even with a 10pm flight, sometimes you will fly out early. I had family with a 10pm flight that left the resort at 1:30pm. If you go for the absolute latest flight, there's also a chance that you miss it due to weather and what not.
