I am not sure if there are non-listed activities that require involvement by the property staff. But if you mean self-directed activities, you can certainly go for your own desert walks, wildlife spotting, etc – a great opportunity for photos amongst the sand dunes.

The evening camel trek is certainly enjoyable and I would likely do it multiple times if staying for a number of nights. Complimentary sparking wine, nibbles and other beverages are provided at the destination to enjoy while watching the sunset too. Although, despite what others in this thread think, I personally wouldn’t want to stay longer than two nights; I would start to get bored.
