I don't think it is common practice again but never really stopped for international long haul flights. There was a brief period during the pandemic when one ways to e.g. Europe were very inexpensive and only added a few dollars (as in C$10 or C$20) to the fare but now it is back to normal.

The good news is that fares from Germany to Canada are super competitive in Y. You can book a latitude fare which is fully flexible for around C$650-700 per direction. If you will eventually fly back to Germany you could just pick a random return date in the future and rebook once you know when you actually want to fly back.

We just booked a number of one ways for my wife for flights within Canada and there was on fare difference on any of them compared to roundtrips.
