Just completed a 5 night stay and returned on Christmas Day. All restaurants are indeed open, some are better than others.
This is my personal restaurant ranking after having sampled them all.
1. La Luce (Italian)
2. Auma (Steakhouse)
3. Maxal (Mexican)
4. Sunan (Asian/ Sushi).
I'm not a fan of sushi, but my wife and daughter are, so we went there the 2nd night. A few of the cooked items were quite good and they liked the sushi.
The best thing about the Mexican restaurant were the tacos served from the taqueria.

Even though I had already received an upgrade visible through the app, the FD still tried to make me pay for the Deluxe Ocean Front Suite. Fortunately I speak fluent Spanish so I was able to deal with it right away.
After huddling with a couple other agents, he relented and I was given the upgrade, which was a one category upgrade anyway from what we had originally booked.
Drinks at some bars are better made than others and the pool/ beach servers are quite happy to get anything for you (food, drinks, setup chairs and umbrellas).
One thing to note, the A/C in the rooms are apparently set to one temperature (65F). You can crank it up to 80F and nothing happens. Solution was to turn if off and open the balcony door to let fresh air in otherwise you would freeze to death.
