Correct. Actually, the dough I am using was, in the original recipe, designed for use in a cookie press. It's a pretty firm dough, you can roll it out and cut it, or form it into a log and slice it.

I have seen the above video. I guess I am just too much of a klutz, because when I try that, the dowels never stay in place, I up with a hump or a depression in the center, and it gets stuck on teh wax paper and I end up with pulled apart cookies.

I think i am going to just go with the sliced dough idea and try the mandolin.
