In my experience, even without official documentation, calling up the hotel to say "Somebody in my party has a fever and a cough and body aches and a sore throat, but our reservation isn't refundable. Should we still show up?" is a quick and reliable way to get the reservation cancelled/refunded, even after the deadline.
