Ah, off the top of my head, lots of restaurants inside the casinos have high ceilings and natural social distancing. For example, I recently dined at the Mandalay Bay's Strip steak where the ceilings are very high and tables all well spread out where it's isn't all that dissimilar from outdoor dining. MGM's steakhouse is the same. The Bellagio's too is pretty well spread out.

So, if you're discerning, I don't think the restaurant risk is that high. But, the shows...ah...not sure how to reduce that risk.
