Actually I've been pleasantly surprised by the state of gastronomy in Amsterdam and in the Netherlands in general with some great experiences. France has become very inconsistent and disappointing and I think nowadays I would choose London over Paris for good food.
I don't know. Maybe it's better in some parts of Amsterdam, but my experience is that gastronomy is hit or miss even if you make fairly educated guesses so as where to eat.
