What about Key West? It's beachy, historic, active and laid-back. Perfect for unwinding and it would eliminate the jet lag problem! Looks like Hilton has a resort there too.

last time we went to florida w/o any kids was approx. 9 months before my oldest was born. don't want to do that again!
