I wonder when you check in if they will cancel your extra seat, without a refund, and assign it to someone else if your don't meet eligibility?

Yes, these are two separate polices:

The key difference is that if you don't fit in one seat and you purchase a second seat as a customer of size then you are entitled to a refund for the cost of the second seat if the flight does not go out full. If you fit in the seat and just want the extra seat then you are not eligible for a refund for the cost of the second seat if the flight does not go out full.

The comfort seat page specifically states three key items:

a. "A companion fare discount code and/or miles may be used to purchase a comfort seat when ticketed at the same time."
b. "Any guest who chooses to purchase a comfort seat, even though they can fit comfortably within one seat with the armrests down, will be ineligible for a refund of the comfort seat, even if all segments of the itinerary depart with empty seats."
c. "Guests purchasing a comfort seat can earn Mileage Plan miles for both the guest seat and for the comfort seat. Mileage earned for the comfort seat does not count toward elite status."
