I flew Connoisseur a few times in the 1990s on UA transatlantic -- also flew United First from LAX to Sydney in 1998 (on the 747)
Connoisseur had burgundy red, leather lounger seats (2x2x2 IIRC) on the 767. Somewhat similar to a roomy domestic first class cabin. First class was navy blue, also lounge recliners. Maybe a bit wider and a bit more pitch. The modern premium seat (lie flat, hard shell) was still many years in the future. The meal service was plated in the 1990s. The gourmet meals served from the cart had gone away in the 1980s. Drinks were however offered from carts at intervals throughout the flight -- similar to the premium carriers today. I don't recall a huge difference in meal quality in business class then and now.
On the Flagship First service to Sydney I do remember caviar service with vodka, and crystal stemware. It was actually a bit over the top.
