Surely the food is, in effect, still served from a buffet - it is merely that it is now piled up inside the kitchen and selected by a server, rather than by the individual diner? Certainly my last few breakfasts in T5 GF have been far colder than back in the day of the self-service buffet.
The same was true of a recent visit to the Concorde Room where the full english was lukewarm so likely picked from the same buffet in the Kitchen.
