Just for laughs - double check 15.1 is installed and it wasn't a failed upgrade (e.g. settings, general, about) - also try with Chrome installed to see if it changes. The issued with iOS 15 was a DRM OS issue affecting all browsers, that is confirmed fixed even by other video providers. There is a chance AA's provider broke something on Safari.
Also when you say "back to not working" - what is the failure.
