Update in case anyone else finds this post in the future with the same questions - I did a lot of research and it seems most premium seats across all airlines (with the exception of suite style setups) have tray tables that are stowed in the armrests of chairs. So, my solution is going to be to pack my own commuter-style lap desk and just take that with me if I need to work.
