There are a lot of people and organisations that monitor that sort of thing. Including ET's own insurance company and security protocols. Similarly there would be NOTAM's issued and airlines would start to avoid the area (look at other conflict zones for examples). At the moment ET is flying, and we have not been told to avoid ET specifically, though my colleagues and friends in Addis have been urged to leave for a bit and wait for things to become clearer.
Personally, I wouldn't book a ticket through Addis at the moment. Nothing to do with security, but rather situations can unfold quite rapidly. You might be out of money on the ticket and unable to find an alternative routing on short notice, and if ET is disrupted badly then also their customer service would be disrupted as well.
