1) Am I correct in interpreting the document as lunch is whatever you want from the menu, but dinner is a fixed 3-course menu? Or are they just saying you can choose an appetizer, entree, and dessert?

2) Given the 4 day minimum someone said, and it having to be for the remainder of your stay... in theory if we have an 8 night stay, we could do a la carte for the first 4 nights, see how it goes, and then opt to do all-inclusive for the last 4 nights?

We've done a few of these more "luxury" all-inclusive add-ons before (what I mean by that is it's an all inclusive option on an otherwise a la carte setup, not a hotel designed for ALL all inclusive), and usually find them to be worth it, but the seemingly picky restrictions on only certain cocktails being included and the set menus seem odd, if I'm interpreting that correctly.

Would love to hear from someone who's actually chosen to do the all-inclusive option and how it went. Also, the 375ml bottles being included in the mini-bar could possibly sway our decision haha.
just got here yesterday and had similar questions, from the lady I spoke to at Veela as well as the person who checked us in:

1. no, same it seems that you can pick anything off the menu for each course each meal (she said anything but I assume it excludes the more expensive items)
2. Yes. We did a la carte the first day and I’m thinking of doing a meal plan for the back 5 or 6 nights I’m here. Will update once I’m on it what new information I can shed
