Prepared properly, (and yours looks to be expertly prepared), they are delicious.
I had never run into it living on the gulf side. This is my second time eating it over on the Atlantic side. I think I tried it sometime this spring in Cocoa Beach. Last time it was fried. It was fine but I like blackened/grilled better. I understand frying because it seems pretty delicate. This may have been a thicker filet.
