United has an invitation-only restaurant called Classified in Terminal C. It is located behind Saison, and they share the same kitchen. Have never eaten at Saison but Classified is solid for being inside an airport, and I would expect Saison to be similar. The most annoying part is that you order from a tablet, but tough to get away from that at EWR Terminal C these days.
