I can't speak of CDG, but for my main airport - Nice, the procedure is now not to check all vaccination at passport control but instead to pick a number of random flights each day and have all proof of vaccination checked at the plane door upon disembarkation. Passport control then does just that, though spot checks are of course always possible.
