Use pesos, please.

While USD will certainly be accepted as tips (they will never say no), it is the same scenario...the workers will still need to exchange them at a bank (best rate) which is very time consuming for them. If they don't want the bank hassle, they will be forced to buy goods from stores that accept USD which are generally overpriced and don't have the best exchange rate.
