Again, the advice that Iberia gave on Twitter was to book with the wrong birth date and fix afterward. Unfortunately, I'm not able to confirm how easy that is, but if you're as eager as I was to get your trip booked, I'd say it's worth a shot if you're unable to resolve the issue on your own within 24 hours.
Thanks for the reply! I tried to book with the "01" and then got an error that the payment wouldn't go through. And oddly, the next day, like you said, it just suddenly worked - the dates and the payment went through.
