AI 112 is operated exclusively by the 744s, so you will get the new Business Class seats. These are extremely comfortable with 60-62" pitch, 160-degree almost flat recline, etc...

IFE is virtually non-existant except on the two newest 744s (VT-AIE and VT-AIF) that have PTVs. However, those are primarily operating FRA/LAX routes for now and the chances of seeing them on 112 are minimal.

Meal service is Air India's strongest point with extremely high levels of catering. Check out the Air India section of airlinemeals.net for some reviews.

Then I need to go on to Mumbai- do AI domestic flights - which I believe are legs of international flights- use the dom terminals or do you have the hassle of the international terminals, in which case I guess IC or Jet would be better.
All Air India flights, international or domestic, operate in customs bond and from the international terminals. You have to pass through customs and immigration formalities even on domestic legs (although it is a much streamlined process with seperate lines). The benefit of course is that Air India's fares are much cheaper (AI's "night fares" for departures between 8pm-8am are often 40-50% lower than the competition).
