I mean, if you are willing to deal with the border, you can just drive her to GIB. Obviously timing matters there.
That said, if you live close to AGP, isn't a connection at MAD pretty much a wash vs driving the 90 minutes or so to GIB? Between being vaccinated, enforcement of masking and the like, flying is not where COVID is a risk. The real COVID risk will be when she gets back to the UK and pretty much everyone has forgotten masks are a thing.
